Grillo

Vinification: the pressing of the grapes is soft and the alcoholic fermentation with maceration on the skins takes place at 80°F for about 11 days. After malolactic fermentation, the wine matures for at least 6 months in large very fine oak barrels and then passes into vitrified cement vats. The assembly takes place after aging in barrels. Refined 6-8 months in bottle to evolve the bouquet. Organoleptic notes: ruby red color with light violet reflections, with a fragrant, intense, spicy and complex aroma, rich in sensations with a fruity and vanilla touch well blended together. On the palate it is rich, ample and velvety, with great structure and aromatic persistence, with elegant and gentle tannins. Pairings: particularly suitable to accompany soups, tasty first courses, grilled meat and vegetables at 64°F

Refines 12 months in bottle to complete its evolutionary state enriching its aromas Organoleptic notes: highly fragrant bouquet, dominated by the enticing scents of white peach and grapefruit, complemented by subtle undertones of aromatic herbs. On the palate, it boasts a robust and mineral-rich flavor profile. Pairings: particularly suitable to accompany fish dishes

Capriata 

Merlot

Vinification: the pressing of the grapes is soft and the alcoholic fermentation with maceration on the skins at a controlled temperature of 82°F lasts 12 days. After malolactic fermentation, the wine matures first in large oak barrels for 6 months and then in vitrified cement tanks. After bottling it ages for 6-8 months. Organoleptic notes: the color is deep and bright ruby red. It has an intense and enveloping aroma with notes of small ripe red fruits. The flavor is rich, warm and velvety with clear sensations of black cherry and particularly elegant tannins. It has great structure and aromatic persistence. Pairings: excellent with seasonal first courses based on red meat and with medium-aged cheeses. Also excellent for appetizers of cold cuts and tasty cold cuts. How to serve it: it expresses the best of itself in a medium-sized glass and served at a temperature of 64°F
